Easy Pinwheels

Need a new spin on lunch? Here's a simple idea to make meal prep easy and healthy!!


Wraps tend to be a lunchtime favorite, but what if you used two different wraps to make your meal prep container a little more colorful?


Ingredients

These pinwheels are customizable to your liking, so feel free to mix, match, or completely leave out the ingredients listed here...

  • Spinach, tomato-basil, or any two colored wraps

  • Low-sodium lunch meats or pulled chicken, beef, or pork

  • Avocado mayo, mustard, or Italian dressing

  • Avocado, lettuce, cucumber, tomato

  • Cheese!

Directions for Assembly

  1. Using one of the colored wraps, add your condiment of choice, cheese, meats, and dressings in layers.

  2. Roll up the wrap. Pro Tip: use toothpicks to hold your wrap in place before cutting into pieces.

  3. Use a sharp knife (carefully) and cut your rolled up wrap into 1-inch pinwheels.

  4. Repeat with a different colored wrap.

  5. Align the pinwheels with alternating colors in your meal prep container.

Variations

These pinwheels can pair easily with fruits and veggies for lunch! But what if you're planning a party, a picnic, or a work potluck? These pinwheels are perfect for charcuterie boards and they're so customizable that you can please the masses!
