Chocolate Protein Mug Cake

A single serving guilt-free snack that'll cure your sweet tooth.

Finding recipes for healthy snacks filled with protein that actually taste great are hard to come by. I remember when I first made a mug cake - it was absolutely awful! But I've tweaked recipes over the years and this version is THE BEST. Plus, I never feel guilty for eating it! It has over 30 grams of protein and doesn't contain a ton of preservatives.

Ingredients

1 Scoop Protein Powder, Chocolate

2 Tablespoons Powdered PB

1/2 Teaspoon Baking Powder

1/4 Cup Premier Protein, Vanilla

1 Tablespoon Pure Maple Syrup

1 Large Egg

1 Tablespoon Dark Chocolate Chunks

Directions

  1. Mix all dry ingredients in small bowl (protein powder, powdered pb, baking powder)

  2. Mix wet ingredients in a separate small bowl (Premier protein, maple syrup)

  3. Whisk the egg into the wet ingredients

  4. Combine dry and wet ingredients together - use a fork to smash out the lumps

  5. Lightly spray a large mug with cooking spray

  6. Pour batter into the mug

  7. Drop in chocolate chunks

  8. Microwave for 80 seconds

  9. Mix the cake with the gooey goodness at the bottom and enjoy immediately! *Caution: cake will be hot*
